We were invited to a potluck and this is my GO TO recipe for taking a dish to pass. It’s simple, healthy and very tasty. You can change out the cans of beans for whatever you have on hand.
SALSA SALAD
1 can of Black Beans
1 can of Pinto Beans
1 can of Garbonzo Beans or Chick Peas
2 cups of frozen corn kernals
1/2 cup diced sweet onion
1/2 cup sliced celery pieces
3 Tablespoons fresh Cilantro
2 cups Pace Picante sauce
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon garlic powder
juice of half a lime
Mix all together, don’t thaw the corn. Decorate with a lemon skin turned backside out and piece of tomato and a couple of parsley sprigs. ENJOY!!
